Healthy, Fast & Delicious: Katarina Stojković’s Best Recipes for Busy Women

If you love recipes that are healthy, yet simple and accessible, then you’ve surely come across Veseli zalogaji by now. Behind this project — which includes a children’s cookbook, workshops, a recipe blog, and a TV show — stands one of us, Katarina Stojković. As a new mother, she faced a familiar challenge: how to make meals healthy and diverse for her child (and herself), while still keeping everything manageable within the daily schedule? So, when we needed quick and nutritious recipes for a busy, active woman who takes care of herself, we turned to Katarina. Here are her recipes we know you’ll love.

#1 Zucchini Waffles with Cheese and Pepper

A perfect protein-packed breakfast with incredible flavor, Katarina says.

Ingredients:

• 1 small zucchini
• ½ red pepper
• 2 eggs
• 50 g grated cheese
• ½ tsp salt, pepper, parsley, garlic powder
• 1.5 cups soft oats
• 1–2 tbsp flour of choice
• ½ tsp baking powder
• 1 cup yogurt

Preparation:

  1. Grate the zucchini, sprinkle with salt, and leave for 5 minutes. Then squeeze out the excess liquid.

  2. Dice the pepper.

  3. In a large bowl, combine all ingredients: zucchini, pepper, eggs, cheese, oats, yogurt, flour, baking powder, and spices.

  4. Cook in a waffle maker for about 5 minutes per batch.

  5. Serve immediately with yogurt or your favorite spread!

#2 Creamy Broccoli Salad

Broccoli is cooked for only 3–4 minutes so it stays crunchy and keeps its color. Fresh vegetables, lemon and mustard give the perfect balance to the creamy dressing, Katarina says.

Ingredients:

400 g broccoli
1 cup sweet corn
2–3 grated carrots
1 cup chopped pickles
½ cup chopped fresh parsley
400 g sour cream (or crème fraîche)
Juice of ½ lemon
1 clove garlic
1 tsp mustard
½ tsp salt and pepper

Preparation:

Lightly blanch the broccoli, chop it, and combine with vegetables and parsley. Mix the sour cream, mustard, garlic and lemon into a dressing, pour over the salad, season, and refrigerate until serving.

#3 Savory Muffin-Style Gibanica

If you love traditional gibanica but want a quicker, foolproof version — this recipe is for you! They stay soft even the next day, so you basically get two meals at once.

Ingredients:

5 eggs
½ cup oil
1.5 cups yogurt
150 g crumbled cheese (I used feta)
5 shredded phyllo sheets
½ tsp baking powder
Salt to taste
Seeds for topping (sesame, pumpkin, flax…)

Preparation:

Combine all ingredients, pour into muffin molds, sprinkle with seeds, and bake for about 40 minutes at 180°C.

#4 Almond Cookies (Four Ingredients Only)

Perfect with tea, coffee, or milk — quick to prepare and full of flavor, Katarina says.

Ingredients:

• 1 cup almonds
• 1 cup rolled oats
• 1/3 cup honey
• 1/3 cup thick coconut milk

Preparation:

Process almonds and oats until they reach a flour-like texture.
Add honey and coconut milk, then mix well.
Shape cookies by hand and, if desired, roll them in chopped almonds.

Bake:
• Air Fryer — 15 min at 180°C (flip halfway).
• Oven — 25 min at 180°C.

#5 Date & Coconut Energy Balls

The ingredients make these treats visually appealing, delicious, and a great addition to your diet. They are healthy, decorative, and ready in just 5 minutes — perfect for little and big sweet-tooths alike, Katarina says.

Ingredients:

1 cup walnuts
½ cup coconut
2 tbsp chia seeds
15 fresh dates

Preparation:

Blend everything together, shape into balls, and roll in your preferred coating. I used puffed amaranth — and the kids loved it.
